How I Discovered This Recipe
I discovered the recipe one morning when I had run out of ingredients for my regular breakfast, a BlueBerry Hemp Smoothie. What else could I make, I wondered, that would incorporate blueberries into something delicious. And so was born this Blueberry Flax Banana Sandwich.
The first thing I did was blend together three very healthy ingredients: flaxseed, blueberries and yogurt. I experimented to find a good consistency that would come out with a peanut butter-like thickness. The result was the recipe below. I then spread it on my toast, and added a sliced banana on top. I was quite pleased with the result.

- 2 pieces Whole Wheat Bread
Instructions
- Mix yogurt and flaxseed meal together.
- Add mixture to your blender or food processor.

- Scoop mixture out and spread over toast.
- Cut up banana into 1/2 inch pieces and place over the spread.
- Slice bread for easier eating. Enjoy!
